Olivia Wallace, the winner of the 2016 pie baking contest, has graciously shared her original recipe:
Strawberry Pie
(makes 2 pies)
Ingredients:
1-8 ounce tub strawberry cream cheese
1 c. whipping cream
¼ c. powdered sugar
¾ c. granulated sugar
2 T. cornstarch
1 c. water
1 3-ounch package strawberry gelatin
2 pie shells, pre-baked
Leave cream cheese at room temperature for an hour to soften.
Whip cream and powdered sugar together until stiff.
Fold into the cream cheese.
Divide mixture between the pie shells, spreading across the bottom and up the sides to make a well.
Refrigerate.
In a large saucepan, combine sugar, cornstarch, and water until smooth.
Bring mixture to a boil over medium heat; cook and stir for 2 minutes, until thickened.
Remove from heat.
Stir in gelatin until dissolved.
Cool for 20 minutes.
Pour over strawberries and divide between pies.
Refrigerate until set.
